Artichoke & Spinach Dip

  • 1 large onion, thinly sliced
  • ½- 1 teaspoon garlic powder
  • 1 cup fresh spinach
  • 2/3 canned artichoke hearts, drained
  • ½ cup organic plain Greek yogurt
  • ½ cup cream cheese
  • 1 handful of Parmesean cheese
  • extra virgin olive oil
  • sea salt to taste

Heat olive oil in a sauté pan, add onions and sauté until caramelized, about 10 minutes. Add spinach and cook until just wilted. Add veggie mixture to your blender, food processor or Nutribullet. Along with chopped artichoke. Pulse with the blade until minced. Add yogurt, chives, salt and pepper and blend until vegetables and cream are fully mixed.


Serve with pita chips, jicama, or carrot sticks!
