Preheat oven to 350 degrees.
First, place defrosted/drained spinach in a mixing bowl and set aside.
In another small mixing bowl, combine the dry ingredients (ground flax seed through pepper) and mix well. Pour on top of spinach.
Use the dry bowl to beat the eggs.
Meanwhile, in a saucepan, sauté the chopped onions with enough extra virgin olive oil to coat and give a slight golden color after a few minutes of sautéing.
Mix all ingredients until well combined, onion, egg, spinach mixture and dry ingredients with clean hands.
Form into 1" balls; place on a baking sheet sprayed with cooking spray.
Can eat alone or with some sweet & sour dipping sauce.
Bake at 350 degrees for 20-25 minutes. Makes approximately 24 balls.
I try to avoid using many types of bread crumbs because of how processed they are (many contain HFCS) ground flax provides the crunch and breading you need!
Spinach balls may be frozen, either baked or unbaked. (I always freeze mine pre-baked.) For pre-baked balls: Remove from freezer about 30 minutes prior to reheating. Reheat in a 350 degree oven for about 10 minutes. For unbaked balls: Remove from freezer 30 minutes before cooking. Bake as directed (350 for 20 minutes)
